Spiced Nut Granola

My daughters and I have a long history of baking delicious granola together.  The girls get to choose what they want in the granola and then we have a blast measuring, pouring and mixing it all up.  Homemade granola is much healthier than store bought and can be made to suit your taste buds.  Plus I love how easy it is to throw on the table for breakfast on a busy morning.

~ Recipe ~

Dry Ingredients ~

  • 5 cups Rolled Oats, we used gluten free oats.  

  • 1 cup Shredded coconut

  • 1 cup Almonds

  • 1 scant cup Cashews Pieces

  • 1/4 cup (or more) ground Flax Seeds

  • Spices such as ground Cinnamon and Ginger, plus Anise Seeds to taste.  These are optional and extremely tasty.  I use a lot... like a big palmful of cinnamon and a 1/4 palmful each of ginger and anise seeds.  Other spices to consider are nutmeg, allspice, cloves and ground cardamom..... yum!!!

  • Sprinkle of Salt

Liquid Ingredients ~

  • 1/3 cup each of Coconut Oil and Honey melted together with...

  • 1 tbs Vanilla Extract

Goodies ~

These are completely optional and you can add as much or as little of these as you would like!  Get creative and choose goodies that you love!

  • Freeze Dried Fruits.  These are my personal favorite because of how the fruits flavor the milk or yogurt in my bowl.  We used these strawberries.
  • Dried fruits like apples, raisins, papaya and cherries are super tasty.
  • Goji Berries
  • Dark Chocolate Chips
  • Crystallized Ginger

Instructions ~

Preheat the oven to 300 degrees.  Mix all the dry ingredients except for your goodies in a big bowl.  Melt all the liquid ingredients together.  I put mine in a pyrex measuring cup.  Then I put the cup in the oven while it is preheating and after a few minutes the oil, honey and vanilla have all melted into a beautiful liquid.  Next carefully pour the warm oil mixture over the dry mixture and stir well until everything is incorporated.  Place the mixture on a jelly roll sheet or a baking pan with sides in the oven.  Bake For 25 to 40 minutes, stirring every 10 minutes.  Bake until the granola is golden brown.  Keep a close eye on your granola, it can burn easily.  The granola will crisp up as it cools.  Once it is cool add your goodies.  Place it all in an airtight container and enjoy!
